this salad is the bomb. a million thank yous to my beautiful cousin for directing me to her friend’s food blog (http://thefantasticmrfeedbag.com/) and to all of this yum.
ok, kids. here goes:
1 bunch of curly kale, de-stemmed and torn up (i used purple kale, because that’s what they had)
1 small head (yes, head) of garlic, diced
1 can great northern beans, drained & rinsed
2 oz danish blue cheese, cut up into small cubes (or, if you’re lazy like me, crumbled blue)
1 plus cup of wine, red or white (I used sherry, and really liked the extra flavor)
saute garlic in a splash of olive oil over med-high heat. when just brown, add a generous splash of wine to deglaze. add kale and another splash of wine to make with the steaming. cover and steam the kale until it begins to wilt, appx. 5 minutes. add beans and cheese, cover, and cook until cheese begins to melt. remove from heat and mix with tongs. eat and find yourself feeling remarkably happy.
